Now that it stopped pouring you may find yourself looking for something to make on your Big Green Egg grill. Today I’m going to share what we made out of this really easy recipe for Island-Style Chicken Sandwich from The Kamado Smoker & Grill Cookbook by Chris Grove. What I also love about this recipe is that the chicken comes out nice and juicy with a very pleasant flavor mix.

Start by making the marinade. Alternatively grab whatever store-bought marinade you chose. Have you seen the selection of grill sauces and marinades at Blackhawk Hardware? I love having a bottle in my pantry for spontaneous grilling. Back to the recipe, though. Combine 3 TBS orange juice, 1 TBS lime juice, 1/2 ts dried oregano, 1 TBS brown sugar, 1/8 ts ground allspice, 1/4 ts chili powder, 1/4 ts cinnamon, 1 whole clove, 1 chopped garlic clove, 1/8 ts ginger, 1/4 ts thyme, and 1/2 ts onion salt. Whisk in 1/2 cup of peanut oil or another high temperature withstanding oil.

Butterflying a chicken breast for the big green egg recipeButterfly 2 -4 chicken breasts (We used two, the recipe calls for four with the same marinade amounts above) by slicing them in half width-wise until about 1/2 in remains. Glad I got my knives sharpened the other day, y’all!

Add the chicken breasts folded open and the marinade to a zip lock bag and refrigerate for 4-6 hours. The recipe calls for flipping them frequently. I forgot and only flipped them once. Oops! Still tasted great!! 🙂

 

 

As you get close to dinner time, preheat the Big Green Egg grill to 400F at direct heat. Once the Egg is preheated, remove the chicken breasts from the marinade, pat them dry and thrown them on the grill. Again, folded open. The recipe suggested grilling them for 5-7 minutes per side with the lid closed. Ours were perfectly done after 5 minutes and I would call them average / standard in size so be careful not to overcook them. You’ll want the internal temperature to reach 160F.

Finally, if you are eating this on buns, you may want to butter them and quickly grill them cut side down until they’re toasted to your liking. Look at them every few seconds or so as they turn from perfect to charred rather quickly…. We added avocado, lettuce and tomato to our sandwich. Very very tasty! Enjoy!
