If you are looking for an easy, fresh take on grilled shrimps to make on your Big Green Egg, look no further: this recipe for grilled lime shrimp skewers could not be easier and tastes wonderful.

First things first, you will want to soak wooden skewers in water for a total of at least 30 minutes so that they don’t catch on fire on the Big Green Egg. Next, prepare the lime marinade for your shrimp. The recipe serves four and calls for 40 large, peeled and deveined shrimps. I’m impatient and no fan of messing with cooked or grilled shrimps instead of eating them right away so I prefer to twist and pull off their tails before marinating them, too.

Now prepare the marinade: Add the zest and juice of three limes, three minced garlic cloves, 1/4 cup olive oil, salt and pepper to a glass dish or zip lock bag. Mix well, then add your shrimps and refrigerate for 30-45 minutes. Set up your Big Green Egg for direct heat and let it heat up to 400F.

Once the shrimps are done marinating, set them on a few paper towels to soak up excess marinade. Then thread them on the pre-soaked skewers. Using tongs or a grilling glove place the skewers on your Big Green Egg grilling grate.

A grilling glove makes turning shrimp skewers a breeze

We found this to be much easier with the glove, especially the next step, which is flipping the skewers after 1.5 to 2 minutes. Don’t leave the grill, these guys are done in almost the blink of an eye especially since marinating them in lime juice has already almost completely cured them (think cevice). Depending on the shrimps’ size they’ll need another good minute or so on the other side. Then just take them off the Big Green Egg with your handy-dandy high temperature resistant grill glove and enjoy!
