Don’t be afraid of bison – these Big Green Egg bison burgers are a delicious step up from regular burgers. Bison, or the other red meat, is a great choice to substitute for ground beef in all your favorite recipes. You can usually find ground bison at many Charlotte grocery stores. The meat is 80 to 90% lean, making for a lean and mild burger – perfect to make on the Big Green Egg to give it that delectable Green Egg flavor touch. And because the use of hormones is prohibited in raising American bison you just made your meal much healthier. The National Bison Association has a great article about how raising and harvesting bison humanely leads to better quality meat and is thus followed by their members. How ’bout that?!

For this recipe for tasty bison burgers from the Big Green Egg we simply added an egg, chopped garlic, salt and pepper to the ground bison, shaped it into patties and drizzled them with our favorite steak sauce.

Set up your Big Green Egg grill for direct heat, light a fire and bring the heat to 350F. Place the patties on the grid and grill 6 – 8 minutes on each side until the internal temperature reaches 140F for medium rare to 160 for medium well on an instant read meat thermometer. After taking them off your Big Green Egg let the burgers rest under aluminum foil for 5 minutes before serving. Ours were delicious with a side of grilled baby peppers and a scrumptious spinach and berry salad. Enjoy!
