You’ll need:

1 quart apple juice
1/2 lb brown sugar
1/2 cup kosher salt
1-1/2 quarts water
1-1/2 oranges, quartered
2 oz. Fresh ginger, sliced thin
8 whole cloves
3 bay leaves
3 large garlic cloves, crushed
Olive oil

This brine is very easy to do and is one of my favorites. To start, you will need a big 5 gallon bucket to put this brine in.  This recipe is for a turkey breast only so if you want to do a whole turkey, just double it.

The apple juice, brown sugar and kosher salt go in a pot.  Let it come to a boil, then take off heat.  Let it sit until it gets to room temperature.   Once this mixture is room temperature, add to bucket with the other ingredients.  Add your turkey breast, close the bucket up and let brine over night.  Take the turkey breast, dry down, rub on olive oil and you’re ready to go.  And remember… watch your fire.
