I offered to bring a dessert when going out to friends for dinner last week, and then remembered that my kitchen was in a bit of upheaval due to some home renovations, and the stove was sitting in the middle of the den. My dessert would have to be simple and not cooked! What to make, what to make? I am always trying to eat light and have come to love Sans Sucre lime mousse which is available in our local grocery stores. It makes me feel as if I’m eating something indulgent when it’s sugar free and low in calories. I whipped up some, spooned it into martini glasses (FYI anything tastes yummy in a pretty martini glass) topped it with a dollop of whipped topping, a sprinkling of fresh lime zest, a lime twist and a cherry!

HOW TO MAKE A LIME TWIST

(Of course this can be done with most citrus but I was using a lime)

Slice your lime into thin, even slices with a sharp paring knife.

Cut a slit from the center down through the peel

Twist!
