Bacon Wrapped Filet Mignon – Big Green Egg for Beginners with Cliff & Trish

Equipment

Big Green Egg 

Cast Iron Grate

Instant read thermometer

toothpicks

Ingredients

2 – 1” thick filets

4 strips bacon

ground black pepper

sea salt or kosher salt

lemon pepper

hydrated onion

Egg Setup

Fill the cook-box with Big Green Egg coal to 1.5 inches above the airholes. Insert the Big Green Egg Electric Starter for 7 minuets. Remove the starter and replace the Cast Iron Grate, close the lid with all the dampers open and watch that thermometer soar. When the Egg reaches 600 degrees you are ready to sear.

Preparation

Wash and remove any fat from the filets. Mix together all seasons and rub generously all over the meat. Wrap the bacon around the steaks and secure with toothpicks.

Grill

Sear each side I.5 minuets turning a quarter turn for cross marks. Close up the dampers till 250degrees and cook until desired internal temperature of 130 degrees for med rare. Let rest 5 minuets before serving. ENJOY!

    How long does the BGE take to cool from 600 to 250? When I grill steaks I sear the same as you, close the draft doors and dwell immediately. I guess im just impatient like that.

    Hi Eric!times on the BGE vary from one situation to the next.The industry standard is one beer.I find it ME about 3 to 4 minutes! Thanks for your question.
